Potato pancakes originally hail from the Eastern European countries. They were known as peasant food. Potatoes were plentiful, and the pancakes have few ingredients making it an easy and low-cost option during hard times.
The nose-to-tail movement has made preparing unusual cuts of meat trendy again. This style of eating teaches us to appreciate and utilize all parts of the animals that we raise. Our great grandparents ate this way out of necessity and now we can relearn these skills out of a desire to be closer to our food and back to basics.
